Coffee Popsicles

Thomas and I boycotted Starbucks for 70 days, mainly because two SB lattes a day gets expensive. I wish I could say that 70 days challenge helped with my coffee addiction, but it didn’t. In fact, I had coffee on the brain so much that I made coffee popsicles. The challenge I faced after that was keeping my kids from eating the coffee ground dipped goodness on a stick.

Coffee Popsicle Recipe


8 oz of brewed coffee
Vanilla ice
Coffee grounds


Blend brew coffee, 3-4 scoops of ice cream, 1 cup of ice. Pour into popsicle molds and freeze. Once fully frozen removed from molds, dip in water then coffee grounds.
